In sourdough, you can find vitamins B1-B6, B12, folate, thiamin, niacin, riboflavin, vitamin E, selenium, iron, manganese, calcium, magnesium, phosphorus, zinc and potassium
(okay – some of these in fairly tiny amounts)–in addition to uniquely balanced proteins and fatty acids.

Sourdough bread also takes longer to digest. If rye flour has been added to the sourdough it helps to regulate the blood sugar levels. Its recommended for people with diabetes. Sourdough is also prebiotic, this means live beneficial bacteria that are naturally created by the fermentation process of our breads.
- Lactobacillus – the most common probiotic found in yogurt and other fermented foods. Can help with diarrhea and may help with people who can’t digest milk sugar (lactose).
- Bifidobacterium – also found in some dairy products. May ease symptoms of irritable bowel syndrome (IBS) and related conditions. Naturally present in the large intestine, bifidobacteria fight harmful bacteria in the intestines, prevent constipation and give the immune system a boost. Furthermore, evidence indicates that bifidobacteria help reduce intestinal concentrations of certain carcinogenic enzymes.
